This cheese has a completely different texture, it’s creamier around the rind and melting in the centre, with fresh notes and taste, thanks to the higher acidity of the cheese.

Pasteurised whole milk cheese with reddish washed rind, creamier under the rind, and more crumbly in the centre. The paste is straw-white with citric sourness, more intense in aged blocks of cheese.
