Gorgonzola D.O.P.
Gorgonzola DOP is raw curd cheese, straw-white color, with greenish veinings which are the peculiarity of this cheese and are the result of the process known as “erborinatura” that consists of growing good mould that contributes to create the characteristic Gorgonzola taste and texture.
There are two kinds of Gorgonzola cheese: Gorgonzola DOP Dolce, with sweet taste and creamy texture, and Gorgonzola DOP Piccante, with spicy taste and “crumbly” paste, with larger presence of greenish veinings.
