Taleggio D.O.P.
Taleggio cheese has a whitish uniform and “chewy” texture, softer under the rind and more crumbly in the center at the end of the aging. Every single Taleggio is a sort of rectangular block with a thin reddish rind whose color depends on the type of mould. The taste is very aromatic with a very fresh sour note and a characteristic flavour. Taleggio is easily digested because no type of treatment is allowed on the rind.
